For taking traditional Malaysian ingredients to new places
Integrating locally sourced and indigenous Malaysian ingredients into European-style fine dining isn’t easy, but chef and owner Aidan Low managed to get Akâr Dining cited as one of Tatler Dining’s Top 20 Restaurants in Malaysia in 2023. Aidan, who started cooking at 10 years old, previously worked at Kuala Lumpur’s Ed.ju Omakase, training before that in France and Japan—and even learning Japanese from scratch to do the latter.
