Colombian chef Fernando Arévalo is proud of his Italian roots, as shown in his latest restaurant opened in honour of his late paternal grandfather (who was originally from Castelnuovo di Conza, Italy). The menu is inspired by his food memories growing up in Bogota, the capital of Colombia, where his family and cousins would feast on pasta dishes and the family’s traditional homemade sauce.
